For the Love of Apples

Today I come to you with just a recipe. No musings. No yoga thoughts. Except, no, I’m trying to incorporate lots of seasonal veggies and fruits to really feel the season and set my system up to thrive. And yours too! So let’s say this is all about the yoga of nourishment and Ayurveda. Nothing is simple!

And yet, this deliciousness is simple to create and perfect for travel. If your apples are big, make two servings at once. It will keep for a few days so you have two “ringers” in the breakfast rotation for your week, all for a small amount of prep.

Apple Chia Overnight Oats

Ingredients:

1-1/25 cups milk of choice (my favorite is always cashew, but absolutely your choice. You might start with the smaller amount of milk and add more if it looks dry).
½ large apple or 1 small apple, grated (medium to fine), or ¼ cup pure, local, organic apple sauce
2 Tbsp. Chia seeds
¼ cup certified gluten free rolled oats
2 tsp. – 1 Tbsp. Blackstrap Molasses
1 tsp. Vanilla Extract
1 tsp. cinnamon
½ tsp ginger
¼ tsp nutmeg (optional)
Stevia to taste
Directions: Combine all ingredients in a mason jar. Cover. Shake. Let sit for a few minutes. Shake again. Let sit. Shake again. Put in fridge for a few hours or preferably overnight. You might want to add additional milk in the morning if the chia have absorbed too much liquid. I love this topped with chopped walnuts and an extra sprinkling of cinnamon and nutmeg. I have been known to drizzle a little drippy almond butter over the top. Or extra molasses as seen here. I love the crunch of the medium grate apples here, but the flavor of apple sauce or the fine grate is also nice. Play with it and see for yourself. It’s the comfort and spice of gingerbread and apple picking, the staying power of chia and oats, all in the simplicity of a shakeable mason jar.

For grain free: omit oats and make it two heaping Tbsps. Or 3 level Tbsps. Of Chia Seeds.
