Dreamy Creamsicle Smoothie

Remember those creamsicles from the ice cream truck? This just as delicious. Maybe even more. But so much gentler on your beautiful bod.

Refreshing in summer’s heat. Perfect for taking to-go, since you don’t have to keep it frozen (just rather cool).  Great as breakfast or garnished with an orange slice and shared for dessert.

Nut allergy? Soak an equal amount of sunflower seeds (raw of course) and sub for the cashews.

Add omegas with a scoop of chia gel or a tablespoon of the unsoaked seeds.

Go green with a huge handful of spinach.

Bulk it up with a few more cashews. Fluff it up with a little extra avocado. Lighten it up with a little extra water. I really don’t think you can ruin it.

Pour it into popsicle molds for a frozen treat to take you down memory lane.

Drinking this, I almost feel like a kid again. Until I sit down to pay the bills.

The Recipe:

1/3 Cup Raw Cashews
¼ Cup (scant) orange juice or juice of one smallish orange or 2 clementines
Zest of ½ orange or one clementine (if using, totally optional)
1 large Medjool Date
¼ Avocado
1 ¾ Cup Cold Water
1 Tsp Vanilla (or more, to taste)
Stevia to taste (optional, or a little agave, or one more date)
Ice (optional)

Directions :

Blend
Slurp

The only problem for me? Getting the last dregs out from under the blender blades. I wouldn’t want to waste any. It’s that good.
